There was a wedding at Castaway-Salt Cay on Salt Cay's pristine North Beach. The ceremony was a combination of a Greek and a Jewish marriage traditions presided over by Mrs. Patricia Simmons. The unique event featured breaking of the traditional wine glass, garlands of flowers for the bride and the groom and a reception following the beach side ceremony at Castaways - Salt Cay for residents and guests a like on Salt Cay.

Valentine's Day Evening brought an Italian style feast at Porter's Island Thyme complete with antipasti, homemade fettuccine, and a myriad of desserts.

This event was "sold out" in keeping with Island Thyme's tradition that your table is yours for the evening. Remember you are on Island Thyme!

There were the birthday celebrations: Mike's, Tim's and Melissa's all celebrated with a special evening out at Porter's.

It is told that our lovable Salt Cay Salina Sally is often seen at night moving from the main salina on Salt Cay to the "blue hole" in the south creek or on rare occasions is seen crossing Victoria Street to reach the ocean from the salinas.

Many people have had encounters with Salt Cay Salina Sally, either while riding their bike or taking their golf cart home through the "middle ground", on their way to their accommodations in the South District of Salt Cay... some comical and others more serious.

New Years Eve (Olde Year's Night)

on Salt Cay this year was a cross between:

"One More Night" and "We are the Children."

The night started with appetizers, scallops wrapped in bacon, then there was Beef Wellington or Salt Cay Red Snapper en papilotte, followed by homemade ice cream parfaits with fresh raspberries and strawberries.

And of course champagne!

There was singing and dancing.

And two new Zookeepers made it to the wall at Porter's Island Thyme on Salt Cay.

New Year's Day brings a Southern Good Luck Dinner. That features extra thick pork chops, black eyed peas, corn bread and Lolli's pineapple cole slaw.

The community of Salt Cay got together at Porter's Island Thyme for Bingo.

A Fun Filled Night for All!

Bingo will be played every other Saturday night with half the proceeds going to buy materials for the Mary Robinson School on Salt Cay. Guests, residents, and Turks Islanders participated in the twice monthly Community Bingo Game to show support for the Community of Salt Cay.

Guests learned the Salt Cay Bingo song.

The prizes get better each week and at the next Bingo Night there will be at least one Token Game.

Salt Cay: Pig Roast

When you visit Salt Cay in the Turks & Caicos we will roast a pig (lechon) for your group for a party not soon to be forgotten.

I traveled to the Philippines to learn how to properly roast a pig and here is the abbreviated version. Now mix this with our culinary experience in the Caribbean and you will have a world class pig roast!

Please remember we need a couple of weeks notice to make sure we have the right pig for your roast.

Special thanks goes out to Long of Torril, Philippines, for showing me how to do this from start to finish.

1. We used a 65 kilo (143 lb.) pig.

2. Boil water to use in scraping off the hair and for keeping everything clean and sanitary.

3. Have the ingredients ready: soy sauce, garlic, lemon grass, green onions, pepper, salt and MSG.

4. After the pig has been dressed making sure the ribs have been separated from the body. Stuff it with the spices and truss up the cavity. (This is not the fun part!) Long did this all by himself...now I understand why he is called the peace maker in the neighborhood. Rest assured nothing is wasted!

5. Prepare the roasting pole and spit.

6. Use hardwood charcoal.

7. Baste the pig in soy sauce and roast slowly, turning constantly by hand for roughly three hours. This will vary depending on the size of the pig.

I can not help being nostalgic about this season. First it was the best Season we have ever had on Salt Cay thanks to your support and patronage!

There were lots of smiles, laughter and many things that had not been done on Salt Cay before.

As I prepare to leave for vacation I have to share the photos of some of the "Moments" on Salt Cay we experienced this year. It was was absolutely fantastic! Thanks to all the cultures who call Salt Cay home.

Many people have always wanted to come to a remote Caribbean island; to swim in the crystal seas, be immersed in the island culture, and become one with the community and experience the laid back pace of life in the islands.

However remoteness has its price...often times specific items are not available and you have to make do.

It happened just the other night when we ran out of Coke Zero for a guest who wanted a rum and coke. Not to worry there were coconuts on our trees at Porter's Island Thyme on Salt Cay that were quickly picked, sliced open and the coconut water chilled. Now everyone is drinking rum and Salt Cay coconut water, which, for now have replaced rum & cokes.

The operation will provide highly personalized scuba diving, snorkeling, whale watching, private charters, bird watching, and eco-friendly excursions on Salt Cay. Mr. Tim Dunn will be responsible for the day to day operation of the business. Tim has led over twenty-five hundred dives in Grand Turk and Salt Cay and spent over 500 hours whale watching after training under one of the best Captains in the Turks and Caicos Islands, Everette Freites. It started out as a typical Friday on Salt Cay with the pizza orders coming in.

Then the surprise visit by the Turks & Caicos Commissioner of Police, his Assistant, and Support Staff.

Congratulations! Kameron.

We asked the Commissioner for a Sargent on Salt Cay and another Constable to support him. He said, "it will all happen." Later on Friday it was announced that Constable Kameron was being promoted to Sargent and a support officer for Salt Cay would be named in the weeks ahead.

Lolli Begins Her Journey Home!

Everyone is a little sadder today on Salt Cay as our Lolli heads back to Davao, Philippines, for her much needed vacation. It is a long trip over 36 hours to wing her way across the Pacific.

The Journey Begins!

To help build Lolli's staminia she will be dining at the Bohio in Grand Turk with our favorite chef in the world, Jorika, on Saturday night along with Cozie.

The real question is will Porter really loose weight as he will be missing Lolli's famous breakfasts at Porter's Island Thyme?

Step One: The Ferry from Salt Cay to Grand Turk.

Not to worry though Lolli will be back on Salt Cay in roughly six weeks ready to start a new season on Salt Cay.

There will be lots of new things happening at Island Thyme for next season, but "mums" the word for now.

Friday night brought an island get together and buffet, where island dishes abounded, at the historic White House, complete with a bonfire.

Whew! What an adventure...everyone should put Six Senses Zighy Bay in the Sultanate of Oman on their "short list" of places to visit. You can do as much or as little as you want to do and everything is more than you expect. The ultimate arrival experience is to paraglide into the resort...and contrary to some opinions there are no weight limits on who can paraglide. Check out the video on Facebook. Bishop Clarence Williams was seen blessing North Beach at the CASTAWAY...on Salt Cay.

The christening of CASTAWAYS...on Salt Cay happened last night. The Conchshoes played on the beach.

Hurricane Ike severely damaged the old Units at Castaways.

They are being taken apart and the wood recycled and put to use on the new units at CASTAWAY.

The old boards are being used to construct walkways at the new units at CASTAWAY...on Salt Cay.

New walkways nearing completion.

Completion of the restoration of the CASTAWAY...on Salt Cay is ahead of schedule and we anticipate being able to confirm your booking as early as late May 2011.

The Students, Teachers and Principal of Mary Robinson Primary School

Saturday Night Bingo at Porter's Island Thyme

resulted in a bunch of happy faces yesterday when the schools supplies purchased with the funds and donations raised during the games were delivered to the school.

Thanks to a number of island guests, just a few part-time residents and MANY, MANY Turks Islanders, Dominican, Haitian and St. Lucian residents of Salt Cay

the first $1000 raised from the weekly Bingo game allowed us to donate reading books,

electronic Leap Frog learning materials, printer ink, a case of copy paper, art supplies and

individual pouches of markers, crayons, scissors, pencils and glue for each of our 12 students.

If you happened to be walking by the Mary Robinson Primary School yesterday, you may have heard the cheers and shouts as the children saw each item emerge!

We have already raised another $1000 and the next delivery will include computers and printers for the school.

Here's one big THANK YOU from the children, the principal and teachers

for helping us help our own island children!
